Waffles

These healthy waffles that cook up light and fluffy.  So delicious, no syrup or toppings are really necessary!

– Eggs – Coconut oil – Coconut milk – Monk fruit sweetener – Vanilla – Baking powder – Sea salt – Almond flour

YOU'LL NEED:

STEP 1:

In a medium sized mixing bowl, whisk eggs. Add the coconut milk, coconut oil, sweetener, baking powder, salt, and vanilla. Continue to whisk together until combined.

STEP 2:

Add the almond flour, and fold in without over mixing.

STEP 3:

Add the batter to a waffle iron.

STEP 4:

The batter doesn't pour as well as a wheat based batter, so use a silicone spatula to spread it out a little.

STEP 5:

These waffles should be cooked to a light golden brown, but not darker, to prevent the almond flour from drying out or burning.
