Keto Chocolate Mug Cake

A healthy keto dessert, made in just a few minutes! These healthy chocolate cakes are made with coconut flour. I like to use a erythritol/monk fruit sweetener, but sweeten with your choice of keto-approved choices! This recipe makes 2 mug cakes. Share with a friend, or wrap the 2nd one up and microwave when another craving strikes. 3 NET CARBS PER CAKE

Ingredients

  • 2 tablespoon coconut oil
  • 2 tablespoon almond milk
  • 2 eggs
  • 2 tablespoons coconut flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons keto sweetener or to taste, depending on type
  • sugar free chocolate chips to top, optional

Instructions

  • In a bowl or large mixing cup, add coconut oil, almond milk and eggs. Whisk to combine.
  • Add coconut flour, cocoa powder, and sweetener, and stir to combine. Keep stirring until more more clumps of coconut flour remain.
  • Split between 2 mugs, and microwave for 1-2 minutes.
  • The second cake can be covered in plastic and cooked at a later time, if desired, or simple adjust the recipe to serve 1!
