Keto Chocolate Mug Cake
A healthy keto dessert, made in just a few minutes! These healthy chocolate cakes are made with coconut flour. I like to use a erythritol/monk fruit sweetener, but sweeten with your choice of keto-approved choices! This recipe makes 2 mug cakes. - 2 tablespoon coconut oil
- 2 tablespoon almond milk
- 2 eggs
- 2 tablespoons coconut flour
- 2 tablespoons cocoa powder
- 2 tablespoons keto sweetener or to taste, depending on type
- sugar free chocolate chips to top, optional
In a bowl or large mixing cup, add coconut oil, almond milk and eggs. Whisk to combine.
Add coconut flour, cocoa powder, and sweetener, and stir to combine. Keep stirring until more more clumps of coconut flour remain.
Split between 2 mugs, and microwave for 1-2 minutes.
The second cake can be covered in plastic and cooked at a later time, if desired, or simple adjust the recipe to serve 1!
