Zoodles Alfredo with Chicken

Enjoy your favorite Italian flavors with this low carb remake! Zoodles are tossed in a creamy, homemade Alfredo Sauce, then served with marinated chicken and burst cherry tomatoes.

Ingredients

Zoodles

  • 2 zucchini
  • 1 tablespoon olive oil
  • sea salt to taste
  • black pepper to taste

Herb Marinated Chicken

  • 1 1/2 pounds chicken thighs boneless, or boneless chicken breasts, pastured / organic recommended
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon thyme
  • black pepper to taste

Zucchini Noodle Chicken Alfredo

  • Keto Alfredo Sauce (1 recipe of Alfredo sauce is 8 servings, so there will be leftover sauce).
  • cherry tomatoes sauteed until burst, if desired
  • parmesan cheese to garnish, optional
  • parsley chopped, to garnish, optional

Instructions

Zucchini Noodles

  • Spiralize the zucchini to make enough noodles for each plate.
  • Either serve the zoodles raw (my preferred method), or saute them lightly with olive oil. Season them with salt and pepper. See this post on How to Make Zucchini Noodles to learn alternate methods for preparing zoodles.

Herb Marinated Chicken

  • Add all ingredients for the chicken marinade into a bowl along with chicken thighs or boneless chicken breasts. Marinate for at least 1 hour, up to overnight.
  • Grill or pan fry chicken until browned on both sides and cooked throughout. Chicken should be cooked to an internal temperature of 165º F.

Zucchini Chicken Alfredo

  • Drizzle each serving of zoodles with about 1/4 cup of Alfredo sauce.
  • Slice the chicken, and top each serving with a piece of chicken.
  • Garnish each dish with burst cherry tomatoes, additional parmesan cheese, and chopped parsley, if desired.

How to Store Leftover Zucchini Alfredo Noodles

For the best flavors, only add Alfredo sauce to the amount of zucchini noodles you plan on eating. Store leftover zucchini noodles, chicken, and Alfredo sauce separately.
When ready to eat the leftovers, reheat the Alfredo sauce and chicken, and toss with the raw zucchini noodles. It's okay to gently warm the zucchini noodles also, but if you overcook them, they get watery and mushy. For the best texture, use the noodles raw, and just toss with hot sauce and toppings.
 

Can I use jarred Alfredo sauce?

Yes, you can substitute a jarred Alfredo sauce to prepare this meal quicker. However, be sure to check the ingredient label for added sugars and starches. Some jarred sauces are also made with milk instead of heavy whipping cream, which increases the carb count.
