Zucchini Seasoned Ground Turkey Cheddar Cheese Keto Enchilada Sauce Ricotta Cheese
YOU'LL NEED:
Use a mandoline to thinly slice zucchini into “noodles.” Line up 3 zucchini noodles end-to-end, and then add a tablespoon of ricotta cheese and about a tablespoon each of taco meat and cheddar cheese. Roll it up.
Add 1 tablespoon of Keto Enchilada Sauce to each cavity of a muffin pan. Add the roll ups, and top each one with extra cheese!
Bake the roll ups for 14 minutes. Do not over bake. Cooking them too long will cause the zucchini to get watery. Enjoy topped with cilantro and chopped onions!
