Keto Banana Bread

Dry
- 2 1/2 cups almond flour blanched
- 1/4 cup flax meal
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
Wet
- 3 eggs beaten
- 1/2 cup monk fruit sweetener or allulose
- 1/3 cup Greek yogurt full fat recommended
- 1 banana mashed (ripe, spotty banana!)
- 1 teaspoon vanilla extract
- 1/4 cup walnuts chopped, optional
In a medium sized mixing bowl, add all of the dry ingredients, and stir to combine.
In a large bowl, add the wet ingredients, and whisk until incorporated.
Add the dry ingredients into the bowl with the wet ingredients, and stir until all of the dry ingredients are mixed in.
If desired, fold in nuts. We love walnuts in this bread!
Line a bread loaf pan with parchment, or coat it with oil and dust it with almond flour. Pour the batter into the pan, and top with a few additional chopped walnuts, if desired.
Cover the pan with foil, tented so it doesn’t ruin the top of the bread as it rises. Bake the bread for 1 hour, and then remove the foil and allow the bread to continue baking for 10-15 minutes, until the top has browned and the loaf is fully cooked in the center. It’s okay if the center sinks in a little! This happens with almond flour breads.
How to Store Keto Banana Bread
Once the loaf has fully cooled, store leftover banana bread in an airtight container in the refrigerator for up to a week.
To freeze the banana bread, cut it into slices, then place parchment paper between each slice. Add to a freezer bag, and freeze up to 3 months.
Defrost 1 slice at a time!
Keto Banana Nut Bread
I typically make this with chopped walnuts. Feel free to substitute your favorite nuts, like pecans, chopped macadamia nuts, or chopped almonds.
Can you Eat Banana Bread on Keto?
