Air Fryer Salmon Bites with Crunchy Cabbage Salad

The PERFECT salad - quick, nutritious, and packed with spicy flavor! Air fryer salmon bites are the perfect flavorful protein to add to a simple cabbage salad. This is shaken up with a creamy almond butter dressing that is completely addictive!

Air Fryer Salmon Bites

  • 1 1/2 pounds salmon filets cut into 1-inch cubes
  • 3 tablespoons coconut aminos
  • 3 tablespoons sriracha paleo, sugar free

Cabbage Salad

  • 2 cups cabbage shredded
  • 1 cup red cabbage shredded
  • 1 carrot julienne cut or shredded
  • 1 avocado sliced
  • 1 cucumber sliced
  • 1/4 cup green onions optional, to garnish
  • 1 tablespoon sesame seeds optional, to garnish

Asian Almond Butter Dressing

  • 3 tablespoons almond butter
  • 3 tablespoons coconut milk
  • 3 tablespoons rice vinegar unsweetened
  • 2 tablespoons coconut aminos
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha

Instructions

Air Fryer Salmon Bites

  • Add the salmon cubes to an airtight container. Cover with coconut aminos and sriracha, and marinate for 30 minutes up to an hour.
  • Preheat air fryer to 390º F for 5 minutes. Add the marinated salmon in a single layer, and air fry for 7 minutes.
  • It’s recommended to cook salmon to an internal temperature of 145º F. If you’re concerned about food safety, use a meat thermometer to check for doneness. Salmon is often served medium rare, so I am not concerned about this.

Cabbage Salad

  • Add the cabbage, red cabbage and carrots to a bowl.
  • Drizzle with the dressing, and toss to combine.
  • Add the cabbage salad to plates. Top with air fryer salmon bites, avocado, and cucumber. Garnish with cilantro, green onions, sesame seeds, or lime wedges, if desired!

Almond Butter Dressing

  • Add all the dressing ingredients to a jar. Shake until smooth and creamy.

How to Store Leftovers or Meal Prep this Salad

If meal prepping Keto Salmon Salads, follow these instructions:

Step 1: Prepare the dressing. Store in a jar or put in individual containers for serving.

Step 2: Prepare the salad by tossing together cabbage, carrots. Add the salad mixture to meal prep containers along with sliced cucumber and avocado.

Step 3: Mix together the marinade for the salmon. Do not marinade salmon until ready to cook it.

Step 4: When ready to enjoy the salads, add cubed salmon to the marinade and allow to sit for 30 minutes. Air fry salmon to top the salads!

Note: You can cook the salmon ahead of time and add it to salads to eat cold! Salads with salmon last in the refrigerator for up to 3 days.

No Air Fryer?

Stovetop Method: Heat a skillet over medium heat with a little cooking spray or avocado oil. Cook the salmon cubes, browning each side, for about 10 minutes.
Oven Method: Preheat oven to 450º F. Line a baking tray with parchment paper. Add marinated salmon to the baking tray and bake for 10-12 minutes.

Other Ways to Enjoy Air Fryer Salmon Bites

Cauliflower Rice Bowl: Heat up cauliflower rice, and top with crispy salmon bites, sliced avocado, and cucumbers. Drizzle with additional coconut aminos and sriracha!
White Rice Bowls: Cooking and then fully cooling white rice reduces the calories and starch content. Reheat cooled rice and top with the salmon bites and some sauteed veggies for a healthy, higher carb meal when you need extra energy!
Zoodle Salmon Salad: Add zoodles to a bowl and drizzle with the almond butter dressing. Top with sliced cherry tomatoes, avocado, and bite-sized salmon pieces.
As an Appetizer: Serve salmon bites with the dressing as a dipping sauce.
