Keto Cookie Dough Balls

Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup nut butter cashew, almond, or sunflower seed
  • 1/4 cup allulose or sub monk fruit sweetener
  • 1 tablespoon maple syrup optional, to add a brown sugar flavor
  • 2 teaspoons vanilla
  • 1/4 teaspoon sea salt
  • 1 1/3 cup almond flour
  • 1/2 cup keto chocolate chips or very dark chocolate chips
  • unsweetened chocolate optional, to coat truffles
  • flakey sea salt optional, to sprinkle on melted chocolate coating

Instructions

  • First, mix together the nut butter, coconut oil (or butter), optional maple syrup, vanilla, allulose and sea salt in a bowl.
  • Add in the almond butter, and stir to combine. Add more coconut oil or nut butter into the mixture if it’s too dry to stick together into cookie dough balls.
  • Stir chocolate chips into the dough.
  • Use a cookie scoop or a measuring spoon to scoop the cookie dough into balls. Place them on a baking tray or plate, and freeze them for about 30 minutes. You can skip freezing them, but they are more firm and easier to coat in chocolate if you do.
  • (Optional): Melt unsweetened or dark chocolate in a microwave safe bowl or on a double boiler. Add 1 teaspoon of coconut oil to thin the chocolate if needed.
  • (Optional): Dip the frozen cookie dough balls into the melted chocolate. Sprinkle with flakey sea salt, if desired. Refrigerate or freeze to allow the chocolate to set.

How to Store Healthy Cookie Dough Bites

These cookie dough bites need to be stored in either the refrigerator or the freezer. They are mostly held together by coconut oil, which softens at room temperature.
Once the cookie dough bites have solidified, pack them in an airtight container and freeze up to 6 months. They can also be stored in the refrigerator for up to a month.
