When you’re running out of the house sans meal, trying to get to your next appointment, pop a couple of these delicious bites for sustained energy to get you through to your next meal. This basic recipe is so versatile. Add whatever keto baking chips you have (white chocolate or butterscotch are awesome!), add freeze dried berries (raspberry dark chocolate!), or add in some nuts for extra crunch. Make the edible keto cookie dough recipe of your (low carb) dreams!

What You’ll Need
- Coconut Oil (melted, or use melted butter)
- Nut Butter (cashew butter is my favorite. Almond butter, peanut butter, or sunflower butter also work! This can also be subbed with cream cheese.)
- Vanilla Extract
- Sea Salt
- Almond Flour
- Allulose or other keto sweetener (allulose is my favorite because it’s a natural sugar that has positive benefits for gut health and almost no calories.)
- Maple Syrup (optional, this adds some brown sugar flavor and adds negligible carbs)
- Dark Chocolate Chips (or sugar free chocolate chips. ChocZero makes my favorite sugar free baking chips.)
- Optional: unsweetened chocolate or dark chocolate to dip the bites in for a chocolate coating.

How to Make Keto Cookie Dough Bites
Step 1: First, add the nut butter, coconut oil (or butter), vanilla, allulose and sea salt in a bowl. Whisk together the wet ingredients.
Step 2: Add in the almond flour, and stir to combine. Add more coconut oil or nut butter into the mixture if the dry ingredients don’t fully mix in. Press between fingers to see if it sticks together to form cookie dough balls.
Step 3: Stir chocolate chips into the dough.
Step 4: Line a baking sheet with parchment paper. Use a cookie scoop or a measuring spoon to scoop the cookie dough into balls. Place them on the cooking sheet or a plate, and freeze them for about 30 minutes. (You can skip freezing them, but they are more firm and easier to coat in chocolate if you do.)
Step 5 (Optional): Melt unsweetened or dark chocolate in a microwave safe bowl or on a double boiler. Add 1 teaspoon of coconut oil to thin the chocolate if needed.
Step 6 (Optional): Dip the frozen cookie dough balls into the melted chocolate. Sprinkle with flakey sea salt, if desired. Refrigerate or freeze to allow the chocolate to set.
How to Store Healthy Cookie Dough Bites
These keto cookie dough balls need to be stored in either the refrigerator or the freezer. They are mostly held together by coconut oil, which softens at room temperature.
Once the cookie dough bites have solidified, pack them in an freezer-safe container and freeze up to 6 months. They can also be stored in an airtight container in the refrigerator for up to a month.
