How to Make Keto Chicken Alfredo with Zoodles
Step 1: Spiralize zucchini and add to plates. You can serve your zucchini noodles raw or cooked. Find out how to make and cook zucchini noodles here if you’ve never made them before.
Step 2: Add all ingredients for the chicken marinade into a bowl along with chicken thighs or boneless chicken breasts. Marinate for at least 1 hour, up to overnight.
Step 3: Grill or pan fry chicken until browned on both sides and cooked throughout. Chicken should be cooked to an internal temperature of 165º F.
Step 4: Add butter and garlic to a clean skillet, and heat over medium heat. Saute for about 5 minutes until garlic is fragrant.
Step 5: Into the skillet, pour the heavy whipping cream. Stir the heavy whipping cream as it heats up, for about another 5 minutes.
Step 6: Add the parmesan cheese into the hot heavy whipping cream, and whisk the sauce as it continues to heat up. The sauce needs to bubble for about 5-7 minutes at a LOW SIMMER (not boil) to melt the cheese.
Step 7: Add and adjust the seasonings to taste, and then remove the creamy sauce from heat. Use while hot. The sauce will thicken and a film will form over the top as it cools.
Step 8: Add hot Alfredo sauce to the top of the zoodles.
Step 9: Top zoodles with sliced chicken and cherry tomatoes. If desired, saute cherry tomatoes over high heat until they burst.
Step 10: Garnish Zucchini Noodles Alfredo with Chicken with additional parmesan cheese and fresh chopped parsley, if desired.
Low Carb Chicken Alfredo FAQ
How to Store Leftover Zucchini Alfredo Noodles
For the best flavors, only add Alfredo sauce to the amount of zucchini noodles you plan on eating. Store leftover zucchini noodles, chicken, and Alfredo sauce separately.
When ready to eat the leftovers, reheat the Alfredo sauce and chicken, and toss with the raw zucchini noodles. It’s okay to gently warm the zucchini noodles also, but if you overcook them, they get watery and mushy. For the best texture, use the noodles raw, and just toss with hot sauce and toppings.
Can I use jarred Alfredo sauce?
Yes, you can substitute a jarred Alfredo sauce to prepare this meal quicker. However, be sure to check the ingredient label for added sugars and starches. Some jarred sauces are also made with milk instead of heavy whipping cream, which increases the carb count.
