I never thought I would use the words “addictive” and “cabbage” in the same sentence, but that’s exactly what these Air Fryer Cabbage Wedges are. A simple seasoning blend, combined with lightly charring the outer leaves of the cabbage, makes this dish so flavorful with the addictive qualities of potato chips!

Lightly Charred Crispy Cabbage Wedges
Air fryers are magical kitchen appliances. Who knew how easy it could be to turn a head of cabbage into an absolutely addictive side dish or snack?
Air frying is a great cooking method for producing crispy or lightly charred vegetables (and meats) with less oil than traditional cooking methods.
A simple blend of spices, along with some lemon juice and olive oil, give this air fryer cabbage a super flavorful exterior.
Popping the cabbage wedges in the air fryer makes them tender perfection on the inside, with crunchy outer leaves.
The first time we tried this air fryer cabbage recipe, we were hooked!

- Green Cabbage
- Olive Oil (or avocado oil)
- Lemon Juice
- Sea Salt
- Paprika
- Garlic Powder

- Fresh Thyme (optional, but an awesome flavor addition)

Which Air Fryer Should I Buy?

You won’t regret investing in one of these! Air fryer vegetables are quick and easy to make, and a variety of main course dishes are as well.
How to Make Air Fryer Cabbage Wedges
Step 1: Cut a cabbage in half. Cut each half into 4 smaller wedges. Do not cut the core out of the cabbage- it holds the wedges together! My cabbage was mid-size. Very large cabbages might need to be cut into more wedges (so each pieces is about 2 inches on the thick side).
Step 2: In a small bowl, combine the salt, paprika, onion powder, garlic powder, and fresh thyme. Mix together well.
Step 3: Add the cabbage wedges to a baking sheet. Drizzle each wedge evenly with lemon juice and olive oil. Sprinkle the cabbage with the seasoning mix. (If only cooking half of a cabbage, only use half of the spice blend.)
Step 4: Heat an air fryer to 370º F. Add the cabbage to the air fryer basket in a single layer, leaving space around each one for hot air to circulate. I only add 2 wedges at a time.
Step 5: Air fry cabbage for 13-15 minutes (no need to wait for the air fryer to preheat!). The should have crispy edges (but not overly burnt). Think the outer leaves of crispy roasted Brussels sprouts.
Step 6: Serve the cabbage hot while the outer leaves are still very crisp.
How to Store Leftover Cabbage
While these are best served hot, they are also a delicious cold side dish.
After the cabbage has fully cooled, place it in an air tight container and refrigerate for up to 3 days.
To reheat: Preheat air fryer to 370º F, and return the cabbage to the air fryer for about 5 minutes. Be careful not to overheat and burn the outer edges of the cabbage.
Air Fryer Cabbage Steaks
If you’d like a different presentation or larger portions of cabbage, cut the cabbage into large rounds.
Season the cabbage just like instructed above.
The cabbage steaks will take 15-17 minutes, since it is thicker than cabbage wedges.
Variations
Italian Parmesan Cabbage: Swap the seasoning and use 1 tablespoon of olive oil, followed with 1/2 teaspoon of sea salt, 1 teaspoon of Italian seasoning, and black pepper. Air fry cabbage with this simple seasoning for 10 minutes. Then, sprinkle each piece of cabbage with about 1 tablespoon of parmesan (1/4 cup total parmesan cheese). Return to the air fryer to melt the parmesan for about 5 minutes. This crispy air fryer cabbage is loaded with flavor!
Air Fryer Red Cabbage: Can I use purple cabbage for this recipe? Yes! The seasoning and cooking times remain the same. Even try this with Napa Cabbage!
