How to Make a Keto Mug Cake
These chocolate mug cakes are my favorite dessert! Single serving desserts are a great way to satisfy a craving without totally going off the rails of healthy eating.
These mug cakes go together in minutes (yay!), and make the best canvas for your favorite keto-friendly toppings!
Why You’ll LOVE this Mug Cake Recipe
- At only 3 net carbs per cake. you can indulge often! Drizzle with some nut butter or add some sliced berries for an even more delicious treat.
- Chocolatey magic! These cakes are rich and fudgey. I like to slightly undercook mine (this keeps the coconut flour from drying out), and top with a few sugar free chocolate chips or chopped 90% dark chocolate.
- Ease — anyone can make these! If you are’t really a baker, or just don’t have time to cook often, the 7 minutes you need to whip one of these up will fit your lifestyle!
- Versatility — go ahead and add some protein powder to this if you have trouble meeting your protein requirements like I do. I like to use Naked Nutrition’s Naked Collagen.
Ingredients in Keto Chocolate Mug Cakes
- Coconut flour (a wonderful low carb baking ingredient!)
- Cocoa powder
- Sweetener of choice – I like this Monk Fruit Sweetener. If you prefer, try a few drops of stevia or pure erythritol.
- Eggs
- Coconut Oil
- Almond milk (unsweetened – or use coconut milk).
How to Make a Mug Cake
Part of the beauty of mug cakes is that you end up with almost no clean up. Most mug cake recipes will instruct mixing up the ingredients directly in the mug.
I typically make two at a time – I always have someone else around who wants to share one with me, and if that’s not the case, I make a second anyway and just put a bit of plastic wrap over the top of the mug and refrigerate it for a day or two so I can microwave it when I am ready.
I prefer to mix up the ingredients in a separate bowl. This just cuts down on the mess around the mug. I am okay with washing the extra bowl while the mug cakes are cooking!
Keto Mug Cake Variations
- I have never tested this recipe with anything other than coconut flour. Will almond flour work in this recipe? Not in an exact proportion. Stay tuned! I will make an almond flour version to share soon.
- Add a flavor kick by adding almond, vanilla or peppermint extracts.
- Add some texture by adding some pecans or walnuts. These will sink to the bottom is you stir them directly in. Microwave your mug cake for 45 seconds, then sprinkle them over the top and continue microwaving for another 30 seconds to a minute.
Toppings for Mug Cakes
- Add a nut butter drizzle. SunButter sunflower seed butter and almond butter are both lower in carbs.
- Strawberries and raspberries are great low carb toppings!
- A sprinkle of shredded coconut (unsweetened).
- Chopped walnuts or pecans, or even some chopped macadamia nuts.
- A quick Keto “frosting” made by mixing 1 tablespoon almond butter, 1 tablespoon coconut oil, 1/2 tablespoon cocoa powder and 1/2 tablespoon powdered erythritol.
- 90% dark chocolate or sugar free chocolate chips (these will melt if sprinkled on right away!).
